Inspiration
Poire Belle Hélène was created around 1864 by Auguste Escoffier, as a tribute to Offenbach's operetta La Belle Hélène. A poached pear, warm chocolate, cold ice cream. Jousset adds cognac, for those who prefer their dessert after dinner.

Of all the Délices, we find Belle Hélène the most grown-up. The cognac and woods take it out of the sweet shop and into a Parisian brasserie. The pear is fresh and juicy, the chocolate dark. A gourmand you can also wear to dinner.
